Grape variety :
Colombard B 60% Old grape variety, native to Charentes .It is called «à double fin» because it can be used for Cognac and wine making.
Chardonnay 40% white grape variety, native from Burgundy aera, used to make still and effervescent wine.
Tasting
To the eye: White gold color with silvery shade. Fine bubbles.
To the nose: An aromatic, fruity & floral nose. Some delicate aromas of white peaches and mimosa are revealed
On the palate: Very fine bubbles: delicate and persistent, bringing freshness. Fruity, round and supple on the palate.
About technique
Selection of our best musts to make this delicate wine.
Chardonnay: direct pressing, clarification: 24 hours at 12.5°C. Controlled alcoholic fermentation temperature: 5 days at 15°C then 16 days at 18°C.
Colombard: harvested at night, skin maceration for 7 hours, pressing at very low pressure, cold storage for 9 days at 1.5°C. Controlled fermentation temperature: starts at 17°C (5 days), then 6 days at 14.5°C. Fermentation stopped at 1009 to make an extra dry sparkling wine (15.9 g/L sugar).
The wines are blended, matured for a short period and carbonated on the estate at 3 bars to produce high-quality bubbles that are fine and pleasant on the palate.
